Last week I made this YUMMY tomato soup. It was easy and so delicious. I adapted the recipe from
More of America’s Most Wanted Recipes
I made it a lighter version
creamy tomato soup
You will need:
5 tablespoons olive oil
1/2 cup chopped onion
5 tablespoons all-purpose flour
4 cups whole milk
1/2 bay leaf
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons sugar
1/2 teaspoon oregano
1/2 teaspoon baking soda
two 15 oz can peeled whole tomatoes, crushed with juice
1. in a stockpot, heat the oil and saute the onion, stirring so the onions don’t brown. Whisk in the flour and stir constantly until the paste is smooth. 1 or 2 minutes.
2. Gradually add the milk , then all the seasonings. (except the baking soda) Simmer until it thickens
3. Stir the baking soda into the tomatoes and add to the soup. Simmer for a couple of minutes to let the flavors blend. Remove the bay leaf, and puree the soup in a blender ( I had to to only half at a time). Reheat and serve warm.
this is what it looks like pre-blended… pretty milky… you need to puree it to bring out the tomato flavor and color.

  1. Thank you so much for hosting! It is difficult to take photos in the evening, isn’t it? I bought a Canon Speedlite flash that can rotate and bounce off walls to help. We have a lot of gray days here in the Pacific Northwest, so the flash has been really helpful. Have a good night!

  2. Thank you for highlighting my root vegetable soup!

  3. I wish I knew how to get good shots! My cooking is done after work and it’s dark out. The light box my husband built helps a little, but nothing beats natural light.
Thank you for the party and happy (almost) 3 years!

  4. Thank you so much for the fun party! I have the same problem with dinner food that I want to photograph. I usually save leftovers and take pictures the next day.

  5. Thanks so much for featuring my Italian Spinach and Crepe Manicotti! So glad you like it. Thanks for the party!

  11. Thanks so much for the feature Emily! Thanks for hosting as well!

  12. I’ve had the same problem with taking pictures at night, especially with it getting dark so early during the winter. I started using my husband’s painting lights. They were about $30, and they provide a lot of bright, indirect light. Then, I use Picassa (it’s free) to adjust the warmth of the light. I’ve also seen suggestions about using a light box. I think you can buy a popup version, but I’ve also seen tutorials on making your own. Good luck!! =)

  13. Thanks for the feature and for hosting! Hope cloth diapering interests people – it is a blast!

  16. I have the same [photo] problem, Emily. A photo light box, good tutorials can be found all over blogland, is a good option. Unfortunately, in my little cottage space is at a premium! I purchased a white foam core board from the craft store and use that a lot. It helps reflect the light back on my “subject”. Thanks for hosting – love your blog!

  17. Thanks so much for hosting and featuring my Chocolate Covered Strawberry Profiteroles. I am so thrilled!
