Roasted Pumpkin with Gnocchi

Roasted Pumpkin Recipe
Todays recipe was one I made in anticipation of the Pumpkin Recipe Roundup. I ended up going with the Pumpkin Soup {lets be honest, the soup is a bit better than this recipe}, but I still liked this one, so I’m going to share it now.


1 cooking pumpkin

2 + 4 TBS Olive Oil

Italian seasoned Panko Bread crumbs 1/2 cup

1 egg

You will first want to roast the pumpkin until {mostly} cooked. I did this by slicing the cooking pumpkin into smiles, brushing with Olive Oil and then cooking for about 30 min at 350. It was soft, but not mushy.
Roasted Pumpkin
Cut the pumpkin in cubes out of the rind. Put the egg in a bowl and mix. In a fry pan on the stove heat 2 tbs oil. Dip the cubes in the egg and the place on one side in the pan. Cook until crisp then turn. Crisp on all sides before placing on paper towel to cool.

Sauce Ideas:
You can top with a red sauce
melted butter
 or I made a Dijon sauce
Melt 3Tbs butter in saucepan
add 1 Tbs Dijon mustard and
1 tsp sugar… stir until all melted and sauce like…
I made the gnocchi, but I don’t love my homemade ones… so use store bought or make the ones that you like best.
